  • 16 oz milk
  • 4 oz sugar, divided
  • 2 egg yolks
  • 1 whole egg
  • 1 1/4 oz corn starch
  • 1 oz butter
  • 1/2 vanilla bean or 1 t vanilla extract
  • pinch salt

Directions

    Scald milk and 2 oz of sugar.

    Combine 2 oz sugar with cornstarch.

    Whisk egg with egg yolks in large bowl. Add the cornstarch/sugar mixture. Whisk well.

    Temper milk mixture into egg mixture. Pour it back into the pot and bring to a boil over medium heat whisking constantly until thickened.

    Remove from heat and add cold butter and vanilla. Strain into a clean bowl and place in an ice bath. Cover surface with plastic wrap. If necessary, whisk again before using.
