- 16 oz milk
- 4 oz sugar, divided
- 2 egg yolks
- 1 whole egg
- 1 1/4 oz corn starch
- 1 oz butter
- 1/2 vanilla bean or 1 t vanilla extract
- pinch salt
Directions

1Scald milk and 2 oz of sugar.

2Combine 2 oz sugar with cornstarch.

3Whisk egg with egg yolks in large bowl. Add the cornstarch/sugar mixture. Whisk well.

4Temper milk mixture into egg mixture. Pour it back into the pot and bring to a boil over medium heat whisking constantly until thickened.

5Remove from heat and add cold butter and vanilla. Strain into a clean bowl and place in an ice bath. Cover surface with plastic wrap. If necessary, whisk again before using.
