Pat'S Catfish Stew

- 1 pkg. frozen catfish
- 4 slices bacon, cut into small pieces
- 1 large onion, chopped
- 3 c. diced white potatoes
- salt, pepper, hot sauce to taste
- 1 bay leaf
- 1 can tomatoes
- 2 c. water
- 2 stalks celery, chopped
Directions

1Fry bacon until crisp; remove and save for topping.

2Add onion and potatoes.

3Saute, stirring often, until onions are golden. Stir in seasonings, tomatoes and water.

4Cover.

5Simmer on low heat about 25 minutes.

6Add fish and continue to cook for 20 minutes more or until fish is tender.

7Ladle into bowls and top with bacon bits.

8Serve with crackers or cornbread muffins.
