Pat'S Catfish Stew

Ingredients

  • 1 pkg. frozen catfish
  • 4 slices bacon, cut into small pieces
  • 1 large onion, chopped
  • 3 c. diced white potatoes
  • salt, pepper, hot sauce to taste
  • 1 bay leaf
  • 1 can tomatoes
  • 2 c. water
  • 2 stalks celery, chopped

Directions

    Fry bacon until crisp; remove and save for topping.

    Add onion and potatoes.

    Saute, stirring often, until onions are golden. Stir in seasonings, tomatoes and water.

    Cover.

    Simmer on low heat about 25 minutes.

    Add fish and continue to cook for 20 minutes more or until fish is tender.

    Ladle into bowls and top with bacon bits.

    Serve with crackers or cornbread muffins.
