- 1 eggplant
- 1 chopped onion
- 1 egg
- 1 c. milk
- 3/4 c. grated or cubed cheese (cheddar is best)
- 4-6 Ritz Crackers, crushed
- 1 tsp. salt
- 2 Tbsp. margarine
Directions

1Peel eggplant, chop and cook in salted water, along with onion, until tender.

2Drain well.

3Add crackers, cheese, beaten egg, margarine and milk to eggplant.

4Put in buttered baking dish and bake on 350 until bubbly and slightly browned, about 45 minutes.
