Ingredients

  • 1 pkg. frozen green peas
  • 1/2 tsp. salt
  • 1 1/2 c. water
  • 1 1/3 c. Minute rice
  • 3/4 c. mayonnaise
  • 1/2 c. chopped dill pickles
  • 1 tsp. grated onion
  • 1 c. cooked ham, chopped
  • 1 c. Swiss cheese, grated
  • 1/4 tsp. pepper

Directions

    Add frozen peas and salt to boiling water; boil 2 minutes. Add rice; cover and remove from heat.

    Let stand 5 minutes.

    Stir in mayonnaise, pickles, onions and pepper.

    Mix lightly with fork and chill.

    Before serving, add ham and cheese.

    Mix lightly. Serve on crisp greens; garnish with tomatoes, olives and carrot strips.
