Ingredients

  • 1 pkg. Minute rice
  • 1 (10 oz.) pkg. frozen peas
  • 1 tsp. salt
  • 1 1/2 c. water
  • 1/2 c. mayonnaise
  • 1/2 tsp. grated onion
  • 1 (5 oz.) pkg. boiled ham, slivered
  • 1 (5 oz.) pkg. Swiss cheese, diced
  • 1 large dill pickle

Directions

    Cook Minute rice per directions and set aside to cool.

    Bring water and salt to boil and add peas.
  3. 3
    Do not cook peas too done. Strain in colander and set aside.

    Dice up dill pickle, ham and cheese.
  5. 5
    Mix all ingredients together with mayonnaise.

    Add a little pickle juice to the mixture.

    Garnish with tomato wedges and slivers of ham and cheese.

    Best served after refrigerating overnight in a sealed container.
