Patrick's Vodka Sauce

  • 2 tablespoons extra virgin olive oil
  • 1 onion, finely chopped
  • 1 tablespoon minced garlic
  • 1 (28 ounce) can crushed tomatoes
  • 1 (28 ounce) can diced tomatoes
  • 1 pinch crushed red pepper flakes
  • 34 cup vodka
  • 2 tablespoons chopped parsley
  • 12 pint heavy cream
  • salt and pepper

Directions

    In a large sauce pan, saute the garlic, onions, and red pepper flakes in the olive oil.

    Add the crushed and diced tomatoes.

    Bring the mixture to a boil over medium heat.

    Add the vodka and a pinch of salt and pepper to taste.

    Simmer uncovered over medium-low heat for about 8-10 minutes.

    Add the cream and parsley.

    Turn heat to low and simmer covered one hour.

    Toss with penne rigate or drizzle over cheese ravioli.

    Sprinkle dishes with fresh grated parmesan.
