Pea And Ham Risotto

- 2 tablespoons olive oil
- 1 onion peeled, finely chopped
- 7 ounces arborio rice
- 5 cups chicken stock
- 5 1/4 ounces frozen peas
- 5 1/4 ounces ham shredded
- 2 tablespoons butter
- 1 ounce Parmesan cheese grated, plus extra, to serve
Directions

1Heat oil in large saucepan. Cook onion over medium heat for 4 mins, until softened. Add rice and cook, stirring, for 3 mins, or until coated with oil and slightly translucent. Add 1 cup hot stock and stir continuously until liquid is completely absorbed. Reduce heat and continue adding stock, 1/2 cup at a time, until rice is tender, about 20 mins.

2Add peas, ham, butter and Parmesan and stir until warmed through and butter and cheese are melted. Season.

3Serve topped with extra Parmesan.
