- 1 (10 oz.) pkg. frozen peas
- 1 c. cubed Cheddar cheese
- 2 hard-cooked eggs, chopped
- 2 Tbsp. chopped onion
- 2 Tbsp. diced red pepper
- 1/3 c. mayonnaise
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. chopped celery
Directions

1Cook the frozen peas according to package directions.

2Drain and cool.

3In a large bowl, combine peas, cheese, chopped eggs, celery, onion and sweet red pepper.

4Combine mayonnaise, salt and pepper.

5Add to pea mixture.

6Toss to mix.

7Cover and chill 4 to 24 hours.

8Stir mixture well.

9Makes 6 side dish servings.
