Pea-Mint Sauce

Ingredients

  • 2 cups peas, frozen blanched and drained well
  • 3 tablespoons white wine vinegar
  • 4 tablespoons mint leaves freshly chopped
  • 3 tablespoons cilantro freshly chopped
  • 2 tablespoons pickled jalapenos or to taste, chopped
  • 1 x salt and black pepper to taste
  • 4 tablespoons olive oil
  • 1 tablespoon maple syrup or honey

Directions

    Add peas, vinegar, mint, cilantro and jalapeno in a blender or food processor, blend or process until smooth.

    With the motor running, slowly add the oil and maple syrup.

    Season to taste with salt and black pepper.

    Refrigerate at least half an hour before serving.

    It can be tossed with pasta, or spread over toasted bread, or a dip for vegetables.
