Pea Pod Roll-Ups

  • 6 ounces snow pea pods (fresh)
  • 13 cup salmon cream cheese spread
  • 1 -2 teaspoon fresh dill weed, chopped
  • 24 pieces red bell peppers or 24 pieces cucumbers or 24 pieces carrots (cut to 1/2-inch x 1/4-inch) or 24 pieces red onions (cut to 1/2-inch x 1/4-inch)

    Heat 3 cups of water to boiling; add pea pods.

    Cook uncovered 1 to 2 minutes, or until bright green.

    Drain.

    Immediately rinse with cold water; drain.

    Dry with paper towels.

    Spread cream cheese over each pea pod.

    Sprinkle with dill weed.

    Place 1 piece of bell pepper on center of each pea pod; bring ends of pea pod over filling, overlapping in center.

    Secure with toothpick.
