Ingredients

  • 1 can French-style green beans, drained
  • 1 small can water chestnuts, drained
  • 1 small jar pimentos, chopped
  • 1 medium bell pepper, chopped
  • 1/2 purple onion, chopped (optional)
  • 1 can Chinese vegetables, drained
  • 1 1/4 c. red vinegar
  • 1 1/3 c. sugar
  • 1 Tbsp. salt
  • 1/2 c. salad oil
  • 1 can LeSueur English peas

Directions

    Combine all ingredients in large bowl except vinegar, sugar and oil.

    Heat vinegar and sugar until sugar dissolves.

    Add salad oil to mixture; pour over vegetables and marinate.

    Cover tightly and refrigerate until completely chilled.

    Vegetables will be very crispy.

    Thinly round sliced carrots are optional.
