Ingredients
- 2 pkg. dried peas (yellow or green)
- ham hocks or smoked pieces
- 1 medium or small carrot, diced
- 1 small onion, peeled and finely chopped
- 1 garlic clove, peeled, mashed and minced
- 2 chicken bouillon cubes, dissolved in 1 c. boiling water
Directions

1Rinse peas; remove off color or impurities.

2Cover with cold water; soak at least 12 hours.

3Drain the soaked peas; cover with fresh water and bring to a boil.

4Lower heat; simmer for several hours.

5Remove any scum or froth from the top.

6Add ham hocks, chicken bouillon, minced onion and diced carrots.

7Continue to cook until peas begin to soften to a mush.

8Stir frequently.
