Pea Soup

Ingredients

  • 2 pkg. dried peas (yellow or green)
  • ham hocks or smoked pieces
  • 1 medium or small carrot, diced
  • 1 small onion, peeled and finely chopped
  • 1 garlic clove, peeled, mashed and minced
  • 2 chicken bouillon cubes, dissolved in 1 c. boiling water

Directions

    Rinse peas; remove off color or impurities.

    Cover with cold water; soak at least 12 hours.

    Drain the soaked peas; cover with fresh water and bring to a boil.

    Lower heat; simmer for several hours.

    Remove any scum or froth from the top.

    Add ham hocks, chicken bouillon, minced onion and diced carrots.

    Continue to cook until peas begin to soften to a mush.

    Stir frequently.
