Peach Blueberry Pie

  • 2 Tbsp. lemon juice
  • 3 c. sliced peaches
  • 1 c. blueberries
  • 1 c. sugar
  • 2 Tbsp. tapioca
  • 1/2 tsp. salt
  • 2 Tbsp. margarine
  • 1 egg yolk

    Sprinkle lemon juice over fruit in a large bowl.

    Mix sugar, tapioca and salt then toss lightly with fruit.

    Let stand 15 minutes.

    Turn into pie shell, mounding in center.

    Dot with butter.

    Cover with pie crust.

    Brush top with beaten egg yolk and 1 tablespoon water.

    Bake 45 to 50 minutes at 425°.
