Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. sugar
  • 1/8 tsp. salt
  • 2 c. ripe mashed peaches
  • 1 large egg, slightly beaten
  • 2 Tbsp. butter or margarine, melted
  • 1/2 c. brown sugar, packed
  • 1 tsp. baking soda
  • 1/2 c. raisins or nuts (optional)

    Preheat oven to 350°.

    In one bowl, mix flour, sugars, salt and baking soda.

    Drain mashed peaches; put in a large bowl.

    Add beaten egg and melted margarine.

    Stir in raisins or nuts; stir in flour mixture.

    Pour into 9 x 5-inch greased and floured loaf pan. Let stand 20 minutes.

    Bake at 350° for 45 to 55 minutes; remove. Cool bread in pan for 15 minutes; remove and finish cooling on wire rack (okay to freeze next day).
