  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 c. self-rising flour
  • 1 (3 oz.) apricot jello (dry)
  • 4 eggs, well beaten
  • 2 c. chopped peaches
  • 2 tsp. lemon extract
  • 1 c. flaked coconut

Directions

    Beat eggs.

    Add oil and sugar; mix well.

    Add flour, dry jello, coconut and lemon extract.

    Mix well.

    Mix chopped peaches by hand. Bake in tube or loaf pans that have been greased and floured.

    Bake at 300° until a toothpick comes out clean.

    This bread freezes well.
