- 2 c. sugar
- 1 1/2 c. oil
- 3 c. self-rising flour
- 1 (3 oz.) apricot jello (dry)
- 4 eggs, well beaten
- 2 c. chopped peaches
- 2 tsp. lemon extract
- 1 c. flaked coconut
Directions

1Beat eggs.

2Add oil and sugar; mix well.

3Add flour, dry jello, coconut and lemon extract.

4Mix well.

5Mix chopped peaches by hand. Bake in tube or loaf pans that have been greased and floured.

6Bake at 300° until a toothpick comes out clean.

7This bread freezes well.
