- 1 Tbsp. gelatin
- 1/4 c. cold water
- 4 egg yolks, lightly beaten
- 1/4 c. sugar
- 1/3 c. orange juice
- 1 1/2 c. chopped peaches
- 1 tsp. grated orange rind
- 1/4 tsp. salt
Directions

1Soften gelatin in cold water.

2In double boiler, combine remaining ingredients.

3Cook over boiling water until mixture thickens, stirring constantly.

4Add 1 1/2 teaspoons cornstarch to gelatin in water and mix until gelatin dissolves.

5Remove from heat and cool.

6Beat 4 egg whites until stiff; add 1/2 cup sugar. Fold gelatin mixture into egg whites.

7Pour into baked pastry shell; chill until firm.

8Top with whipped cream.
