Peach Glazed Corned Beef

- 3 lb. piece corned beef
- 1 bay leaf
- 2 tsp. prepared mustard
- 1/4 c. brown sugar
- 1 (13 oz.) can peach halves
- 1/4 c. catsup
- 2 Tbsp. vinegar
Directions

1Place corned beef in heavy saucepan or Dutch oven.

2Add water to cover.

3Add bay leaf; cover and simmer 2 1/2 to 3 hours, or until meat is tender.

4Remove from heat.

5Cool meat in cooking liquid.

6Remove meat; slice across the grain.

7Arrange slices, overlapping, in a 12 x 7 1/2 x 2-inch baking dish.

8Drain peaches, reserving 1/4 cup syrup.

9Arrange peaches around meat.

10Combine reserved syrup and remaining ingredients; pour over meat.

11Bake at 350° for 1 hour, basting occasionally.
