  • 2 1/3 cups self-rising flour
  • 1 tbsp mixed spice, such as pumpkin pie spice
  • 2/3 cup firmly packed brown sugar
  • 1/3 cup slivered almonds
  • 1/2 cup milk
  • 2 None eggs, lightly beaten
  • 3 tbsp butter, melted
  • 1 can (15 oz) peach slices in natural juice, drained, halved lengthwise
  • 2 tbsp granulated sugar

Directions

    Preheat the oven to 350°F. Lightly grease two 8 x 4-inch loaf pans. Line the bottom and sides with parchment paper.

    Sift the flour and spice into a large bowl. Stir in the brown sugar and almonds. Fold in the combined milk, eggs and butter. Spoon the mixture evenly into the prepared pans.

    Arrange the peach slices evenly over the top of each cake. Sprinkle with sugar.

    Bake for 35-40 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
