  • 1 1/2 cups mashed, fresh ripe peaches (about 5 medium)
  • 1/2 cup sugar
  • 1 (13-ounce) can evaporated milk, chilled
  • 1 tablespoon lemon juice
  • Dash of salt
  • Peach slices
  • Fresh mint leaves

Directions

    Combine mashed peaches and sugar, stirring until sugar dissolves. Set aside.

    Beat milk in a large mixing bowl until soft peaks form; gently fold in peach mixture, lemon juice, and salt. Spoon mixture into a 6-cup mold, and freeze overnight.

    Unmold onto a serving dish. Garnish with peaches and mint leaves.
