- 5 c. fresh peaches
- 3/4 c. sugar
- 1/4 tsp. cinnamon
- your favorite pastry recipe for double-crust pie

1Preheat oven to 400°.

2Combine peaches, sugar and cinnamon in a large bowl.

3Let stand 10 minutes.

4On a floured surface, roll half the pastry into 12-inch circle.

5Fit into a 9-inch pie plate, leaving a 10-inch circle.

6With a sharp knife, cut pastry into 3/4-inch wide strips.

7Carefully arrange strips on fruit, 1 inch apart, in a lattice pattern; trim edge.

8Bake 1 hour or until filling is bubbly.

9Cool on wire rack.
