  • 1/2 onion, chopped
  • 1 pkg. Mexican cornbread mix
  • 4 eggs
  • 3/4 c. oil
  • shredded Cheddar cheese (8 oz.)

Directions

    Mix first 5 ingredients in 13 x 9-inch pan.

    Cook at 350° for approximately 20 to 30 minutes.

    Before completely done, sprinkle with cheese and cook until melted.
