  • 1 pkg. apricot gelatin
  • 3/4 c. hot water
  • 4 Tbsp. lemon juice, divided
  • 1 1/2 c. ripe sliced peaches
  • 1/2 c. chopped celery
  • 1/2 c. chopped nuts
  • 1 c. ginger ale

Directions

    Dissolve gelatin in hot water.

    Add ginger ale and 2 tablespoons lemon juice.

    Chill until slightly thickened. Sprinkle 2 tablespoons lemon juice over peaches.

    Fold peaches, celery and nuts into thickened gelatin.

    Chill until firm in 8

    or 9-inch square pan.
