  • 2 lb. ripe peaches (about 6 large), peeled, pitted, and coarsely chopped
  • 2 Tbsp. finely chopped red onion
  • 1 Tbsp. chopped fresh mint
  • 1 Tbsp. fresh lime juice
  • 1 tsp. seeded, finely chopped jalapeno chile
  • 1/8 tsp. salt
