  • 3 12 ounces vanilla pudding mix
  • 1 12 teaspoons baking powder
  • 18 teaspoon salt
  • 12 cup butter, softened (1 stick)
  • 13 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 34 cup low-fat milk
  • 14 cup peach jam or 14 cup peach preserves

    Preheat oven to 350, and line a muffin tin with paper liners.

    Whisk flour, pudding mix, baking powder, and salt in a medium bowl.

    Set aside.

    Cream butter and sugar in a large bowl.

    Beat in eggs and vanilla.

    Alternately add flour mixture and milk to bowl (the batter will be a bit stiff).

    Spoon batter into prepared muffin tin, filling about halfway.

    Place scant teaspoon of jam on top of each cupcake; press in lightly.
