- 1 12 cups flour
- 3 12 ounces vanilla pudding mix
- 1 12 teaspoons baking powder
- 18 teaspoon salt
- 12 cup butter, softened (1 stick)
- 13 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 34 cup low-fat milk
- 14 cup peach jam or 14 cup peach preserves

1Preheat oven to 350, and line a muffin tin with paper liners.

2Whisk flour, pudding mix, baking powder, and salt in a medium bowl.

4Cream butter and sugar in a large bowl.

5Beat in eggs and vanilla.

6Alternately add flour mixture and milk to bowl (the batter will be a bit stiff).

7Spoon batter into prepared muffin tin, filling about halfway.

8Place scant teaspoon of jam on top of each cupcake; press in lightly.
