- 1 (16 oz.) can sliced peaches
- 6 Tbsp. oleo, melted
- 2 eggs
- 1 Tbsp. lemon juice
- 2 c. flour
- 3/4 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 3/4 c. chopped pecans
- 2 Tbsp. peach preserves
Directions

1Drain peaches, reserving 1/4 cup syrup.

2Finely chop 1 cup peaches.

3In blender combine remaining peaches, oleo, eggs, reserved peach juice and lemon juice.

4Cover and blend until smooth.

5Stir together dry ingredients.

6Add egg mixture; stir until moistened.

7Fold in reserved peaches and nuts.

8Bake in a greased 8 x 4 x 2-inch loaf pan at 350° for 1 hour.

9Spread with peach preserves.

10Cool in pan at least 10 minutes.
