Ingredients

  • 1 to 2 cans (1 lb. 13 oz.) peach halves
  • 2 Tbsp. butter, softened
  • 2 1/2 c. (1 lb. 1 oz.) sweet potatoes, mashed
  • 2 Tbsp. brown sugar
  • 1 1/2 tsp. orange peel, grated
  • 1/4 tsp. salt
  • 2 Tbsp. brandy (optional)
  • chopped nuts
  • brown sugar
  • cinnamon

Directions

    Drain peach halves.

    Arrange halves with cut side up in baking dish.

    (To make peaches stand upright, cut thin slice from bottom of each half.)

    Cream the butter and mashed yams.

    Add brown sugar, orange peel and salt.

    Add brandy and blend.

    Spoon mixture onto peach halves.

    Sprinkle with chopped nuts, brown sugar and cinnamon.

    Bake, uncovered, at 350° to 400° for 15 to 20 minutes. (Can microwave on High for 4 minutes, turning once during cooking.)
