Peanut Brittle

Ingredients

  • 2 c. sugar
  • 1/2 c. water
  • 1 c. white Karo syrup
  • 1 tsp. butter
  • 2 to 3 c. raw peanuts
  • 1 tsp. vanilla
  • 2 tsp. soda

Directions

    Boil sugar, water and syrup to 260° or soft crack.

    Add butter and peanuts.
  3. 3
    Lower flame and stir constantly.
  4. 4
    Bring to boil; cook until peanuts are done and turn to a golden brown (takes about 10 minutes).

    Have ready vanilla and soda.

    Add vanilla and soda and beat hard, just until foamy.

    Pour out immediately onto buttered enameled tray.

    (A regular cookie sheet is too thin.)

    Do not spread with spoon or you will loose the bubbles. Get everything ready before starting because the last steps go so fast.

    Use a heavy kettle for cooking.
