Peanut Brittle

Ingredients

  • 1 c. corn syrup
  • 2 c. sugar
  • 1/2 c. water
  • 2 c. raw peanuts or dry roasted peanuts (I like these the best)
  • 1 stick margarine
  • 1 1/2 tsp. vanilla
  • 2 tsp. baking soda

Directions

    Cook corn syrup, sugar, water and raw peanuts to 230°.

    Add margarine and vanilla and cook to 290°.

    Take off heat and add baking soda.

    This makes it real airy.

    But make sure baking soda is fresh or it will not be any good.

    Then pour onto a well buttered long cookie sheet and let cool a little to where you can work with it with your hands (buttered) and stretch as to desired thickness.
