- 1 c. sugar
- 1/2 c. light corn syrup
- 1 c. raw unsalted peanuts
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 tsp. butter
- 1 tsp. vanilla
Directions

1Combine sugar, corn syrup, peanuts and salt in an 8-cup measure.

2Microwave, uncovered, on High for 7 to 8 minutes, stirring well after 4 minutes.

3Add butter and vanilla and blend well.

4Microwave on High for 1 minute.

5Peanuts will be lightly browned and syrup very hot.

6Add baking soda and stir until light and foamy.

7Pour mixture onto lightly greased cookie sheet.

8When brittle is cool, break into small pieces and store in airtight container.

9Makes 16 servings.
