Peanut Butter Bread Pudding

Ingredients

  • 3 c. milk
  • 2/3 c. sugar
  • 1/3 c. peanut butter
  • 2 eggs, slightly beaten
  • 1/4 tsp. salt
  • 1 lb. butter or oleo, softened
  • 2 Tbsp. grated orange rind
  • 4 slices day old bread, broken up

Directions

    Combine milk, sugar and peanut butter. Beat with eggbeater until smooth.

    Heat on low to scalding.

    Add gradually to the beaten eggs, stirring constantly.

    Add the rest of the ingredients.

    Stir well.

    Add bread pieces and mix well.

    Put into a 1 1/2-quart buttered baking dish. Set in a pan of hot water. Bake at 350° for 1 hour. Serve warm or cold.
