Peanut Butter Pie

- 2 c. milk
- 1/2 tsp. salt
- 1/2 stick butter
- 1/3 c. sugar
- 4 Tbsp. cornstarch
- 1/2 c. cold water
- 3 large egg yolks, beaten
- 3 Tbsp. creamy peanut butter
- 9-inch baked pie shell or graham cracker crust
- whipped cream or meringue
Directions

1Bring milk, salt, butter and sugar to a boil.

2Mix cornstarch with water.

3When all the lumps are dissolved, mix in egg yolks. Pour into boiling milk mixture.

4Remove pan from heat and whisk until thick and smooth.

5Now whisk in peanut butter.

6Cool to room temperature.

7Pour into pie shell.

8Cover and refrigerate until cold, then top with whipped cream or meringue.
