Peanut Butter Pie

  • 2 c. milk
  • 1/2 tsp. salt
  • 1/2 stick butter
  • 1/3 c. sugar
  • 4 Tbsp. cornstarch
  • 1/2 c. cold water
  • 3 large egg yolks, beaten
  • 3 Tbsp. creamy peanut butter
  • 9-inch baked pie shell or graham cracker crust
  • whipped cream or meringue

Directions

    Bring milk, salt, butter and sugar to a boil.

    Mix cornstarch with water.

    When all the lumps are dissolved, mix in egg yolks. Pour into boiling milk mixture.

    Remove pan from heat and whisk until thick and smooth.

    Now whisk in peanut butter.

    Cool to room temperature.

    Pour into pie shell.

    Cover and refrigerate until cold, then top with whipped cream or meringue.
