- 2 lbs boneless chicken breasts
- 1 -2 tablespoon oil
- 1 large onion
- 14 teaspoon crushed red pepper flakes
- 12 cup apple juice
- 1 cup peanut butter
- 1 tablespoon honey
- 14 cup apple cider vinegar
- 2 tablespoons sugar
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 2 -3 green onions, chopped (optional)
Directions

1Dice chicken into bite sized pieces.

2Saute chicken in oil over medium high heat (do not brown).

3Dice onion and add to chicken.

4When onion is soft and chicken is mostly done, turn heat down to medium and add apple juice.

5Let cook for 1-2 minutes.

6Turn down heat to low and stir in peanut butter.

7Stir until combined.

8Stir in remaining ingredients.

9Simmer 5 minutes and serve.
