Peanut Corn Chowder

- 2 Tbsp. butter
- 1/2 c. finely chopped celery
- 1/4 c. finely chopped onion
- 1/2 c. chunk style peanut butter
- 1 can chicken broth
- 1 pkg. frozen whole kernel corn
- 1 c. light cream
Directions

1In hot butter in medium saucepan, saute celery and onion until tender.

2Remove from heat.

3Add peanut butter, stirring until melted.

4Gradually stir in chicken broth, then corn.

5Bring to boil, stirring constantly.

6Reduce heat and simmer uncovered 10 minutes, stirring occasionally.

7Remove from heat.

8Stir in light cream; reheat gently.

9Makes about 1 quart.
