  • 1 Tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 1 Tbsp minced fresh ginger
  • 2/3 cup crunchy peanut butter
  • 1/2 cup milk
  • 1 Tbsp fresh lime juice
  • 2 tsp tightly packed brown sugar
  • 1-1/2 tsp reduced sodium soy sauce
  • 1/2 tsp coconut extract
  • 1/8 tsp ground red pepper

Directions

    Heat vegetable oil in medium pan over medium heat. Add minced garlic and minced ginger. Cook until soft (about 2 minutes). Add peanut butter, milk, lime juice, brown sugar, soy sauce, coconut extract and red pepper. Cook, stirring constantly until mixture is thickened. Process in food processor or blender with 1/2 cup of milk until smooth.
