Ingredients

  • 1 c. chopped onion
  • 2 medium cloves crushed garlic
  • 1 c. peanut butter (creamy or chunky)
  • 1/4 tsp. cayenne pepper (more, to taste)
  • 2 Tbsp. lemon juice
  • 1 tsp. ground ginger
  • 1 bay leaf
  • 3 Tbsp. vinegar
  • 1 c. water
  • dash of soy sauce
  • 2 Tbsp. margarine, for frying

Directions

    In saucepan, cook onions, garlic, bay leaf and ginger in margarine.

    When onion becomes translucent, add remaining ingredients.

    Mix thoroughly.

    Simmer 30 minutes, stirring occasionally, or until desired consistency.

    Serve over steamed vegetables or pasta.
