- 1 c. chopped onion
- 2 medium cloves crushed garlic
- 1 c. peanut butter (creamy or chunky)
- 1/4 tsp. cayenne pepper (more, to taste)
- 2 Tbsp. lemon juice
- 1 tsp. ground ginger
- 1 bay leaf
- 3 Tbsp. vinegar
- 1 c. water
- dash of soy sauce
- 2 Tbsp. margarine, for frying
Directions

1In saucepan, cook onions, garlic, bay leaf and ginger in margarine.

2When onion becomes translucent, add remaining ingredients.

3Mix thoroughly.

4Simmer 30 minutes, stirring occasionally, or until desired consistency.

5Serve over steamed vegetables or pasta.
