- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 1/4 c. flour
- 2 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 3 c. grated carrots
- 1/2 tsp. salt
- 2 c. walnuts, finely chopped
Directions

1Mix sugar, oil and eggs (one at a time).

2Add dry ingredients a little at a time until all is well blended.

3Add carrots, vanilla and nuts.

4Bake at 350°.

5Baking time:

62 (9-inch) layers, 30 to 35 minutes; 9 x 13-inch pan, 55 to 60 minutes and tube pan, 1 hour and 10 minutes.
