- 4 ripe pears
- 1 1/4 c. lowfat milk
- 1/2 c. sugar
- 2 egg whites
- 1 egg yolk
- 1 Tbsp. crystallized ginger, chopped
- 2 tsp. vanilla
- 1/8 tsp. salt
- 1/2 c. flour
- 2 Tbsp. sliced almonds
Directions

1Preheat oven to 350°.

2Spray a 10 inch quiche pan with vegetable cooking spray.

3Peel and slice pears; arrange in pan. In blender combine milk, sugar, egg whites, yolk, ginger, vanilla, salt and flour.

4Blend.

5Pour batter over pears.

6Top with sliced almonds.

7Bake 1 hour or until knife into center comes out clean. Sprinkle with confectioners sugar when cooled.
