Ingredients
- 4 qt. pears, ground up
- 2 qt. onions
- 8 green peppers
- 4 sweet red peppers
- 2 hot peppers
- 1 stalk celery, chopped
- 4 c. sugar
- 2 Tbsp. turmeric
- 6 Tbsp. prepared mustard
- 8 Tbsp. flour
- 1 c. salt
- 2 qt. vinegar
- 1 large yellow onion
- 1 Tbsp. sugar
- 1/2 c. wine vinegar
Directions

1Peel and thinly slice the onion into rings.

2Cover with cold water and soak for 30 minutes.

3Drain.

4In a small bowl (ceramic, not plastic, which will hold the smell forever), stir the sugar into the vinegar until dissolved.

5Add the drained onion.

6Cover tightly with foil and refrigerate for a few hours, stirring once or twice and pushing the onion rings under the vinegar.

7Use for salads and any dish requiring raw onion.
