  • 4 qt. pears, ground up
  • 2 qt. onions
  • 8 green peppers
  • 4 sweet red peppers
  • 2 hot peppers
  • 1 stalk celery, chopped
  • 4 c. sugar
  • 2 Tbsp. turmeric
  • 6 Tbsp. prepared mustard
  • 8 Tbsp. flour
  • 1 c. salt
  • 2 qt. vinegar
  • 1 large yellow onion
  • 1 Tbsp. sugar
  • 1/2 c. wine vinegar

Directions

    Peel and thinly slice the onion into rings.

    Cover with cold water and soak for 30 minutes.

    Drain.

    In a small bowl (ceramic, not plastic, which will hold the smell forever), stir the sugar into the vinegar until dissolved.

    Add the drained onion.

    Cover tightly with foil and refrigerate for a few hours, stirring once or twice and pushing the onion rings under the vinegar.

    Use for salads and any dish requiring raw onion.
