- 1/4 lb. salt pork, chopped fine, fat from a baked ham or bacon drippings
- 1 onion, chopped
- 1 c. canned tomatoes or 2 Tbsp. tomato paste
- salt and pepper to taste
- thyme to taste
- 1 c. pigeon peas or black-eyed peas
- 2 c. rice
Directions

1Fry salt pork to get the fat.

2Add onion, tomato, salt, pepper and thyme.

3Stir all together and continue cooking.

4Add peas and 3 cups water.

5Let come to a boil and stir in rice.

6Cover and cook until rice is tender and water absorbed.

7Add another cup of water and cover to swell the rice.

8Add more water, if needed. Yields 6 to 8 servings.
