- 1 c. rice
- 2 c. water
- 1 small onion, minced
- 1 green pepper, diced
- 1/4 c. bacon, diced
- 1 (8 oz.) can pigeon peas
- 1/4 c. (2 oz.) tomato paste
- salt, black pepper, paprika and thyme to taste
Directions

1Fry bacon until crisp.

2Add green pepper and onion to the pan and cook until onion is clear.

3Add water, peas, tomato paste, salt, black pepper, paprika, thyme and rice.

4Cover the pot with a tight fitting lid and simmer until all of the water has been absorbed.
