- 1/2 c. watermelon juice
- 1/2 c. watermelon pulp
- 1 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/8 tsp. cinnamon
- pinch of salt
- 6 Tbsp. butter, softened
- 2/3 c. sugar
- 1/2 c. milk
- 1/2 c. raisins
- 2 eggs
Directions

1Preheat oven to 300°.

2Sift flour, baking powder, soda, cinnamon and salt in a large bowl.

3Cream butter and sugar; add eggs.

4Whip in milk, juice, pulp and raisins.

5Add wet mixture to dry ingredients and blend to moisten dry ingredients.

6Fill greased muffin cups 2/3 full, bake approximately 25 minutes. Transfer to wire rack to cool.
