Ingredients
- 3 lb. chicken pieces, skinless
- 4 Tbsp. olive oil
- 3 large onions, chopped coarsely
- 1/2 c. brandy
- 2 to 3 carrots, chopped
- 1 bay leaf
- 1/2 tsp. thyme
- salt and pepper to taste
- 1/2 lb. bacon, chopped
- 1 lb. canned tomatoes
- 2 cloves garlic
- 1/2 c. any kind of wine
- 1 handful chopped parsley
Directions

1In bottom of a large Dutch oven, heat oil and brown chicken, a few pieces at a time, removing as browned.

2Brown onions and bacon, then return chicken.

3Pour brandy over and ignite.

4Keep it burning as long as possible.

5Add tomatoes, carrots, garlic, herbs and wine.

6Salt and pepper to taste.

7Bring to a boil.

8Cover and reduce heat; let simmer for 1 hour.
