Peasant Chicken

Ingredients

  • 3 lb. chicken pieces, skinless
  • 4 Tbsp. olive oil
  • 3 large onions, chopped coarsely
  • 1/2 c. brandy
  • 2 to 3 carrots, chopped
  • 1 bay leaf
  • 1/2 tsp. thyme
  • salt and pepper to taste
  • 1/2 lb. bacon, chopped
  • 1 lb. canned tomatoes
  • 2 cloves garlic
  • 1/2 c. any kind of wine
  • 1 handful chopped parsley

Directions

    In bottom of a large Dutch oven, heat oil and brown chicken, a few pieces at a time, removing as browned.

    Brown onions and bacon, then return chicken.

    Pour brandy over and ignite.

    Keep it burning as long as possible.

    Add tomatoes, carrots, garlic, herbs and wine.

    Salt and pepper to taste.

    Bring to a boil.

    Cover and reduce heat; let simmer for 1 hour.
