- 4 tablespoons butter
- 1 onion, chopped
- 2 large garlic cloves, chopped
- 1/2 lb smoked beef sausage
- 1 teaspoon dried oregano
- 6 medium potatoes
- 2 cups savoy cabbage, sliced (or other)
- 1 cup red bell pepper, roasted
- 1/2 cup parmesan cheese, shaved
- salt
- pepper
Directions

1Slice sausage into 3/4 inch thick slices.

2Cut potatoes into cubes 1 1/2 to 2 inch pieces.

3Dice or slice red pepper.

4Melt butter over medium heat.

5Add onion and garlic, cook and stir 5 minutes or until onion is translucent.

6Stir in sausage and oregano.

7Cook 5 minutes.

8Stir in potatoes, and add salt and pepper to taste, mix well.

9Transfer to crock-pot or slow cooker.

10Cover and cook on low 6 to 8 hours or on high 3 to 4 hours stirring every hour.

11Add cabbage and bell pepper last 30 minutes of cooking.

12Top with parmesan cheese before serving.
