Pecan Caramels

Ingredients

  • 2 c. sugar
  • 2 c. (1 pt.) light corn syrup
  • 1/2 c. real butter
  • 2 c. half and half
  • 1 tsp. vanilla
  • 1 c. chopped pecans or walnuts

Directions

    In large heavy saucepan, boil sugar and corn syrup to firm ball stage (245°), stirring occasionally.

    Add butter and half and half, stirring so slowly that syrup does not stop boiling at any time.

    Again cook rapidly, stirring constantly, to 245°.

    Remove from heat and stir in the vanilla and nuts.

    Pour into well-buttered 9 x 9-inch pan.

    Cool.

    Cut into bite-sized pieces and wrap each in waxed paper.
