Crawfish-Cornbread Dressing

- 4 Tbsp. butter
- 1 onion, finely chopped
- 2 stalks celery, chopped
- 1/2 lb. chopped crawfish tails
- 1 1/2 tsp. paprika
- salt, black pepper and red pepper
- 1/2 tsp. dry mustard
- 1 bell pepper, finely chopped
- 2 c. chicken stock
- 3 c. crumbled cornbread
- 1/2 tsp. thyme
Directions

1Melt butter.

2Add onion, bell pepper and celery; saute for 2 minutes.

3Add salt, pepper, paprika, thyme and mustard.

4Simmer 5 minutes.

5Add stock and bring to a boil.

6Add crawfish and cook 15 minutes.

7Stir in cornbread and cook 2 to 3 minutes.
