  • 2 c. sifted flour
  • 2 tsp. soda
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 3/4 c. sugar
  • 1 c. Crisco vegetable oil
  • 4 eggs
  • 2 c. grated carrots
  • 2 c. chopped pecans

Directions

    Measure and sift together all dry ingredients.

    Blend in vegetable oil and eggs.

    Fold in grated carrots and chopped pecans. Pour in 2 cake pans.

    Bake for 25 to 30 minutes in 360° oven.

    Ice with simple confectioners sugar icing.
