- 2 egg whites, at room temperature
- 2 c. confectioners sugar
- 1 tsp. cider vinegar
- 1 tsp. vanilla extract
- 2 c. pecan halves
Directions

1Preheat oven to 300°.

2Grease cookie sheets.

3In a small bowl, with mixer at high speed, beat egg whites until soft peaks form. Beating at high speed, gradually sprinkle in sugar, a few tablespoons at a time; beat until sugar is completely dissolved. Beat in vinegar and vanilla.

4Fold in pecan halves.

5Drop mixture by teaspoonfuls 2 inches apart, onto cookie sheets.

6Bake 12 to 15 minutes.

7Cookies remain light.

8Remove cookies to cool.

9Makes 3 1/2 dozen cookies.
