- 4 egg whites
- 7 oz. sugar
- 1/4 tsp. almond extract
- 2 drops lemon extract
- 9 oz. nuts (pecans and almonds), chopped fine
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
Directions

1Heat oven to 350°.

2Beat egg whites until stiff.

3Mix sugar and extracts together.

4Mix sugar into the egg whites, fold until well blended.

5Add pecans and fold again.

6Spray Pam on cookie sheet and drop a teaspoon at a time.

7Bake 10 to 12 minutes or until lightly brown.

8Put remaining batter in refrigerator until ready to use again.

9Remove cookies while still hot from cookie sheet.

10Must be kept dry and don't put them in a sealed container.
