- 1/2 lb. butter
- 2 eggs, beaten
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 c. brown sugar
- 4 Tbsp. mandarin peel, chopped
- 3 1/2 c. flour
- 2 c. pecans, chopped
Directions

1Cream butter, add brown sugar, eggs, mandarin rind, mix well. Mix flour and baking soda together, add to butter mixture.

2Mix in pecans.

3Shape dough into long rolls about 2-inches wide.

4Wrap in waxed paper, chill.

5When ready to bake, slice 1/4-inch slices, place on cookie sheet, bake 350° 12 to 15 minutes.

6Cookie dough rolls can be refrigerated for up to a month.

7Makes 75 cookies.
