  • 1/2 lb. butter
  • 2 eggs, beaten
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 c. brown sugar
  • 4 Tbsp. mandarin peel, chopped
  • 3 1/2 c. flour
  • 2 c. pecans, chopped

Directions

    Cream butter, add brown sugar, eggs, mandarin rind, mix well. Mix flour and baking soda together, add to butter mixture.

    Mix in pecans.

    Shape dough into long rolls about 2-inches wide.

    Wrap in waxed paper, chill.

    When ready to bake, slice 1/4-inch slices, place on cookie sheet, bake 350° 12 to 15 minutes.

    Cookie dough rolls can be refrigerated for up to a month.

    Makes 75 cookies.
