- 3 c. white sugar
- 1 c. white syrup
- 1/8 tsp. salt
- 2 egg whites, beaten stiff, but not dry
- 1 c. pecans, chopped
- 1 tsp. vanilla
Directions

1Combine sugar, syrup, water and salt in heavy saucepan.

2Cook until it reaches a hard ball stage on candy thermometer (very important).

3Remove from heat.

4Pour syrup over stiffly beaten egg whites very slowly, beating constantly.

5Add vanilla and nuts and continue beating until it loses its glossy look and holds its shape.

6Drop by teaspoon onto waxed paper.
