Ingredients

  • 3 c. white sugar
  • 1 c. white syrup
  • 1/8 tsp. salt
  • 2 egg whites, beaten stiff, but not dry
  • 1 c. pecans, chopped
  • 1 tsp. vanilla

Directions

    Combine sugar, syrup, water and salt in heavy saucepan.

    Cook until it reaches a hard ball stage on candy thermometer (very important).

    Remove from heat.

    Pour syrup over stiffly beaten egg whites very slowly, beating constantly.
  5. 5
    Add vanilla and nuts and continue beating until it loses its glossy look and holds its shape.

    Drop by teaspoon onto waxed paper.
